My friend and exercise buddy, Amy, asked me the other day if I have ever made cottage cheese muffins and I had to say that I never had. She told me about these muffins she once had and was dying to have them again; could I help?
Flattered and curious, I promised I would do my best to recreate the phantom muffins. As Amy described them, the muffins should not be too sweet, the texture should be light and fluffy and you should be able to see and taste the cottage cheese.
Hummm…
Nothing like a bit of a conundrum to get the creative juices flowing.
I immediately came up with a buttermilk version that was too dense, then I went way out to left field and tried adding a little vegetable shortening and let’s just say the results were nothing to write home to mama about. Then they were too sweet and finally, I hit the mark. Light, fluffy and loaded with cottage cheese, they were delicious!
Way to go Amy! Thank you for the inspiration, the support, and the will to keep dragging myself to the gym to keep my “muffin tops” a manageable size.
And because muffins were meant to have a little something added to them, I threw in some raisins for contrast, which really brings out the cottage cheese flavor in the end.
Like most muffins, they are the best the day they are prepared, making them a perfect accompaniment for a brunch or just to enjoy before your respective workout.
