My mother’s retirement party is this Saturday and I’ve been baking like mad the last few days to complete the desserts for the party. So far 55 people have RSVP and I’m beginning to feel a little bit nuts, but the full on crazy streak hasn’t hit me yet…but it is tomorrow night and I’m only half way there!

I’m making 65 Cosmic Brownie Bites with a dark chocolate ganache, 65 minature tarteletts filled with my Basil infused custard and Lemon Chanitilly Cream and for the cake, I’m making a 12″ three layer Gateau Succes.

For those who have never heard of a Gateau Succes, it is essentially three layers of meringue rounds filled with almond praline buttercream icing, encrusted with toasted sliced almonds and dusted with confectioner’s sugar. It is an absolute show stopper, but it’s size has proven to be a challenge.

It’s been so humid (as in 100%) the last couple of days, the first batch of my meringue disks didn’t turn out. The second batch was a success, but since there are three 12″ rings, I had to store them in my oven overnight to ensure that they wouldn’t go straight to chewy-goey ruin. I still haven’t checked, but I haven’t finished my coffee yet. Come to think of it, I haven’t even started to tartletts yet. I do have the butter cream made and the Cosmic Brownie Bites and icing done, so I’m almost half way there…

Damn! And I’m completely out of everything. I think I have maybe 3 tablespoons of butter left in the fridge, no milk, no basil and two sad looking lemons. Come to think of it, I dont’ even have any sugar! Time to go to the store…
