Okay, there is one more thing that can make things just a little bit better and that is a vinyasa class at Bodhi Yoga. I’ve just returned from an hour of pure flowing goodness and now my entire body is a total sack of jello and it is awesome. So I just have to give a big old shout out to my friend and teacher, Paul, for leading such an exceptional class. You rock! (As do all the teachers at Bodhi)

As a symbol of my gratitude, I wanted to post a health-conscious recipe that is tailored to Paul’s attraction to raw foods. Ironically enough, this is a recipe that I prepare several times a week just to satiate the sugar beast when I’m not in the mood for one of my richer confections.
1 Cup Low Fat Ricotta
1/4 Cup Raw Agave Nectar (or to taste)
1/3 Cup Raw Cashews
1 Teaspoon Mexican Vanilla
In a large mixing bowl, stir together the ricotta, agave nectar, and vanilla until smooth. Reserve a few cashews to garnish the dessert with and then stir in the remaining cashews. Serve immediately.
Serves 2
*Because I’ve made this recipe so many times, it has morphed many times and once you make this, you’ll see the potential for experimentation. If you want to make it with almonds, just substitute the almonds for the cashews and almond extract for the vanilla. I also like to add 1/3 cup of sweetened shredded coconut for the addtional depth of flavor and texture.

karen! foshizzle, I really love reading your blog. and I read A LOT of newspapers, magazines, blogs, it goes on, between work and being bored at work, I really make the internet rounds, and your blog is a sweet and refreshing stop. I am congratulating myself because I made a salad! this week (with pre-grilled chicken from CM) so Im not much of a chef as of late and I am sorry I haven’t been able to try any recipes. But! they all look AMAZING and I do hope to try this Pavlova business soon. I love that story, by the way. drinks soon! I lamed out on kite fest too |
