Tarnation!
All I can say is, what was I thinking? Or, shall I say, where in tarnation was my thinking not to think of making chocolate pudding until now? Leo is already three and I’m just now making him chocolate pudding? Oh my god, the moment I made this realization I went into a moment of caustic self flaggelltion, lambasting myself for three years of oversight, retardation and general neglect. HOW COULD I? I ate pudding until it was comming out of my ears when I was little… I’m a horrible, wretched person!!!
Well, rather than whittle my self-esteem down to a dull nub, I decided to focus on the positive and rationalized my guilt to at least I remembered at all and that some kids don’t ever get to taste homemade pudding. Most other kids, including myself, are raised on the JELLO standard, so at least I’m evolving a baby step in the right direction…
So I guess the moral of the story is I may be a forgetful mother from time to time, but at leas this pudding recipe is to die for. I’ve made it twice in the last two days and I’m considering running up to the store to buy some more milk…
ΒΌ Cup Cornstarch
2/3 Cup Granulated Sugar
1/8 Teaspoon Salt
3 Cups Whole Milk
6 Oz. Semi-sweet High Quality Chocolate, chopped
2 Teaspoons Pure Vanilla Extract
In the top pan of a double boiler, combine the cornstarch, sugar, and salt. Whisk well until there are no longer any lumps. Pour the milk into the dry ingredients and whisk well. Heat until the mixture begins to thicken, about 12-15 minutes, stirring occasionally. When the mixture looks thick and smooth, remove the pudding from the heat and then add the chopped chocolate and vanilla extract. Whisk until silky smooth. Strain pudding through a fine seive. Pour the pudding into your serving bowls or glasses and refrigerate for several hours before serving.
Serves 4-6 depending on the size of your serving dishes.

No worries, I’m sure your little one doesn’t mind a bit that he hadn’t until recently had your homemade chocolate pudding. Because he’s eating it now! You are too sweet and adorable for words. If only all mothers cared like you! The world would be a happier place. Can’t wait to try this recipe and all your others; I’m newly diagnosed, and blessed to have an answer, with celiac. |
