Gluten Free Churros

Ingredients:

  • 1 1/4 cups milk
  • 1/3 cup (5 tbsp + 1 tsp) butter
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup gluten-free bread mix (or all-purpose flour)
  • 4 – 5 large eggs
  • Oil or frying fat for deep-frying
  • Cinnamon sugar for coating

Instructions:

  1. In a medium saucepan, heat the milk, butter, salt, and sugar together.
  2. Once the milk mixture comes to a boil, add the flour and stir vigorously until the mixture forms a ball.
  3. Remove the saucepan from the heat and let the dough cool slightly.
  4. In a mixing bowl, beat the eggs until they are light and fluffy.
  5. Gradually add the eggs to the dough, beating with an electric mixer or stand mixer until the mixture is smooth and glossy.
  6. Fill a piping bag fitted with a star tip with the dough.
  7. Heat 2-3 inches of oil or frying fat in a deep saucepan or large pot to 340-350°F. Use a thermometer to ensure accurate temperature.
  8. Pipe the dough into the hot oil, cutting the churros into desired lengths (around 6-8 inches) with a pair of scissors.
  9. Fry the churros until they are golden brown, turning them once during cooking.
  10. Remove the churros from the oil with a slotted spoon or tongs and drain on paper towels.
  11. While the churros are still warm, roll them in cinnamon sugar.
  12. Serve immediately and enjoy!

Tips:

  • To make sure the churros are cooked through, insert a toothpick into the center. If it comes out clean, they are done.
  • For a fun twist, you can also add other flavors to the churros, such as chocolate, vanilla, or fruit.
  • Churros are best served warm, but they can also be made ahead of time and reheated in the oven or toaster oven.

Notes:

  • The amount of eggs needed can vary slightly. Add the eggs to the dough gradually, stopping when the mixture has a consistency similar to thick whipped cream.
  • Churros are also delicious with a chocolate sauce for dipping.
